Simple Blueberry Cake with Cinnamon Streusel

I have never tasted blueberries until one day my hubby ordered a fruit cake from whole foods . I loved them. They are tangy, like raspberries, but they have a unique flavor and cannot be compared to anything else. Some of them are sweet. I am a big fan of fruit cakes . They are so fresh and sinfully delicious. I researched for many recipes using these berries . I love streusels on cakes and pies. A streusel is a crumb topping of butter , flour , cinnamon and sugar that is baked on top of cakes and muffins.I used them as a topping on my cake too. 




I made a three layer cake in which one layer was white cake , second was fresh blueberries and third was streusel . I used some store bought blueberries , one large egg (At Room temperature) and a cup of butter (At room temperature). It was just awesome .






Simple Blueberry Cake with Cinnamon Streusel            
Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 60 minutes
Serves about: 3-4 












Ingredients
For Streusel
  • 1/3 Cup of All purpose flour
  • 1/3 Cup of Granulated Sugar
  • 1-2 tsp of cinnamon powder
  • 1/4 cup of Unsalted Butter
For Blueberry Cake
  • 1 Cup of All purpose flour
  • 1/2 Cup of Granulated Sugar
  • 1/4 Cup of Unsalted Butter
  • 1 Large Egg(At Room Temperature)
  • 1/2 tsp of Pure Vanilla Extract
  • 1 tsp of Baking powder
  • 1/3 Cup of Milk
  • 2 Cups of Fresh Blueberries
Method
  • Preheat Oven to 350 F (180 C) 
  • Place all ingredients for streusel in a bowl one after one and mix well to form a course crumble powder. Set them aside
  • Place a quarter cup of butter in a large mixing bowl and whisk them using a hand mixer until soft. Add a 1/2 cup of sugar to it and whisk them for a minute or two until it mix well with butter
  • Add 1 large egg with yolk to it  and vanilla extract and beat them for 1-2 minutes until they mix well
  • Now Sift the flour, baking powder , A pinch of salt in a separate bowl and set them aside 
  • Slowly beat the egg mixture well by adding the flour and a quarter cup of milk to it simultaneously 
  • Now the cake mix is ready . I used a 8 inch cake pan and greased it well with butter all over
  • Add the batter to the pan and spread all over with a silicon spatula or spoon .
  • I used some freshly washed blueberries. Please discard the mushy ones and use only the good ones. Top them with 2 cups of blueberries 
  • Finally add a layer of streusel to the cake and spread well
  • Bake the cake for about 40 - 50 minutes until a tooth prick inserted comes clean
