Fresh Basil Pinenut Pesto

Wishing you all a Happy, Healthy and Prosperous NEW YEAR Party!! 2012 has been a great year for this blog, because it was just born for 3 months and am overwhelmed with the feedback from my  friends and family and I thank them all for comments, appreciation and suggestions. I am starting this new year with my favorite herb "Basil " . Recently I had Pasta Cavatappi in noodles & company and was totally in love with it . So I bought the fresh basils and prepared pesto . Its a very simple recipe with pine nuts and parmesan cheese .You can do many things with this pesto . You can add a dollop to freshly made minestrone soups, You can add them to bread and make sandwiches ,Add in a salad and toss it. 





Fresh Basil Pinenut Pesto             
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Serves about: 2












Ingredients
  • About 2 Cups of Fresh basil
  • 1 Cup of Pinenuts
  • 4-5 Cloves of Garlic
  • 1/2 cup of Olive oil 
  • 1 tbsp of Salt & Pepper
  • 4 tsp of lemon juice
  • 1 Cup of parmesan regiano
  • 1 tsp of Crushed Red pepper flakes
  • 2 Cups of Whole Wheat Rotini Cooked Pasta
  • 4-5 Cherry Tomatoes,Finely Chopped
Method
  • Place all the ingredients except pasta and tomatoes in high powered blender/food processor. Pulse it until smooth.That's it . Now pesto is all ready to create magic in your pasta by its amazing flavor and smell . God I love it.
  • Take a pan, Add some olive oil and toss the cooked pasta ,tomatoes and pesto. Toss it well and serve hot.
