Ivy Gourd Peanuts Stir fry is my all time favourite curry .It is a classic andhra curry served in special functions at our house. I love the crunchy and nutty flavour in this curry. Here goes how I made this curry :
Ivy gourd Peanuts Stir fry
Ingredients
- 1/4 Kg of Ivy gourds
- 1/3 Cup of Peanuts
- 1 tsp of Mustard Seeds
- 1 tsp of Cumin seeds
- 1 tsp of Channa Dal
- 1 tsp of Urad Dal
- A pinch of Asafoetida
- 4-5 Curry Leaves
- 2-3 Whole Red Chillies
- 1 tsp of oil
- 2 tsp of Red Chilli powder
- 2 tsp of Gram flour
- Salt to Taste
- Wash Ivy Gourds and Slit them into half in middle and cut into half and repeat the same for others.
- Heat oil in pan, add peanuts and next 7 ingredients and fry them till they turn brown .
- Add the cut ivy gourds to the tempering and salt ;cover them and cook for 5-10 minutes on low flame.
- Now add red chilli powder and gram flour to it and fry another 2 minutes .(You can add Sambhar powder too ,Optional) and switch off the stove.
Serve this curry warm with steamed rice .
My Notes
- You can cut the ivy gourds into any shapes as you wish.
- Please try to retain the colour of the curry by not overcooking the dish.Always cook on low-medium flame.
