Carrot Halwa

Carrot Halwa, one of my husband's favorite desserts . I always thought its very tricky to prepare this dessert.But later realized its very easy to make with a little patience and cooking on low flame. Adding cardamom to it while frying carrots induces amazing flavor to the dessert .




Carrot Halwa - Indian Dessert              
Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes
Serves About :4








Ingredients
  • 4-5 Medium Sized Carrots, Finely Shredded
  • 1/2 ltr Milk
  • 1/2 Cup Sugar
  • 2 tsp Cardamom powder
  • 2 tbsp of Ghee 
  • 5-6 Crushed Cashew nuts
  • 4-5 Raisins
Method
  • Wash and peel the carrots and finely shred them using a food processor and set aside.
  • Heat some ghee in a pan , fry some cashew nuts and raisins till brown and remove; set aside.
  • Take a large sauce pan, Add some generous amount of ghee and add the shredded carrot and some cardamom powder ; fry till they turn soft and cook well.
  • Now add the milk to it and cook well on low flame for at least 20 - 30 minutes until all the milk is absorbed by the carrots .
  • Now add sugar to it and mix well for another 10 minutes. (You can add some ghee to it now ,Optional)
  • Finally remove and set aside ; Garnish with nuts we fried and kept aside earlier.

Serve Warm or Chilled. Its so so yummy and delicious dessert to impress your guests ;)
